Little Nan’s Ginger Loafcake

Also known as Little Nan’s Ginger Cakeloaf.

Ginger Loafcake.

Ingredients

175g butter
3 cups self raising flour
3 tbsp golden syrup
1 1/2 cups milk
1 1/2 cups brown sugar
3 tsp powdered ginger
1 1/2 tsp mixed spice
2 tsp (level) baking soda

How to make it happen

Preheat the oven to 180 degrees Celsius.

Mix all of the dry ingredients together – except for your baking soda.

Melt the butter, syrup, and milk together in a saucepan on low heat. When the butter is completely melted, add the baking soda and stir/whisk with a fork. It will go all fizzy. Just make sure it doesn’t end up all over your stove top, like mine did.

Add the wet ingredients to the dry ingredients and mix good like with a wooden spoon. It’ll go all gooey/doughy. Now is a good time to taste test the mixture. Maybe one or two spoonfuls. Or more.

Put whatever mixture is left over from your taste testing into a loaf pan, and put into the oven.

Nan’s recipe said to cook for an hour, but I think that’s based on ye olde ovens, so it only really needs about 50 mins. But stick a butter knife or something in it to make sure it’s cooked all the way through.

It’s very nice sliced and spread with butter.

Jarod’s edit: this cake would taste awesome if it didn’t taste like ginger.

I don’t mind graffiti as long as it is interesting. Tagging is annoying, but if someone has put some effort in and come up with a design, then I’m okay with it.

Especially if it’s of cats. Last night when coming home from Stanmore station and walking up one end of our lane, I spotted this little kitty:

Black Kitty!

Then, when walking to Newtown station (leaving via the other end of our lane) I spotted this kitty:

Blue Kitty!

Now, whichever station I choose to walk to in the morning or home from in the afternoon, I get to see a kitty and smile. Yay!

The Salsa ate my jeans!

Turns out chain guards aren’t 100% effective 100% of the time. Was going about 30kph down a hill, them wham, my right leg gets sucked down into a black hole, only to be spat back out minus my jeans cuff.

Ahhh Shit.


Highland Fling sells out in 5.5 hours!

It’s a pretty good indication of how popular the mountain biking is in Australia. All the entries to the Highland Fling (1500 of em!!!) were sold out a mere 5.5 hours after they went on sale. Crazy!!

I’ve got my entry for the 55km Half Fling which I’ll be doing on Whitey the single speed. Training has already begun and I’m excited as all hell!!

Then this must be the weekend wrapup post!

On Saturday morning I logged a cool 37kms on the fixed Salsa. My legs certainly feel it this morning.

On Sunday there were numerous logistical & freight (comedy of) errors before Liz and I were finally at home around lunchtime with our brand new Ikea Expedit 5×5 bookcase. The rest of the afternoon was spent building & filling it. Now our second bedroom doesn’t constantly look like a bomb hit it.

Then I slept. Now I’m here, back at Monday morning and wondering where the hell another weekend has disappeared to.

Huzzah!

Highland Fling, Here I Come!

I wasn’t going to enter the 2009 Highland Fling. But this morning I was made aware that there has been a change in the rules. In previous years registration had to be done the day before the race. This year however, they’re allowing rego from 6am til 7am on the day of the race as well.

Nice work to the organisers for realising that a pre race day registration inconveniences a hell of a lot of people. Several BMU people were saying they’ll drive for 1.5 hours to register, drive home, sleep, then head back on race day. Times that by a Jarod-estimated 50 – 100 people that don’t want to camp/get accommodation and the ‘carbon neutral’ status of their event is very much in doubt.

Anyway… ranting aside… I’ll be registering as soon as they get their server issues sorted. And I guess training starts tomorrow.
