Tasty disaster muffins!

Original recipe from Fig & Cherry… the below is a slightly altered version, probably leading the the issue seen below.

Mmm, tasty disaster.

1 cup self raising flour
1 cup caster sugar
1 tsp bicarbonate soda
1/2 tsp salt
1/4 tsp ground cinnamon
100g melted milk chocolate (nestle melts style)
1 egg, lightly beaten
125g butter, melted
1 tsp vanilla extract
2-3 medium very ripe bananas, thoroughly mashed

1. Preheat the oven to 180C.

2. Sift the flour, sugar, bicarbonate soda, salt and cinnamon into a large mixing bowl.

3. Make a well in the centre and add the chocolate, beaten egg, butter, vanilla and bananas. Fold until all ingredients are just combined, taking care not to over mix.

4. Spoon mixture evenly into the 12 muffin holes and bake for 20mins.

Eat the tasty mess!

    Hi Jarod and Liz,

    Oh no! What happened? The only thing I can think of is that the oven was opened too early causing them to sink a little, it says you baked them for 5 mins less than mine. Also, I used mini muffin tins which need less cooking time. Were yours regular sized muffins?

    I’m glad you liked the taste though – it’s so nice when the chocolate melts in the warm butter and mixes with the banana, isn’t it?

    Yeah, I have no idea! When I went to check on them (before I opened the oven) they were already like this, so I just pulled them out early so I could at least eat the goo ;)

    The only thing I can think of is that I might have put too much chocolate in or mixed it too much. (A re read of your recipe says to take care not to over mix). But, they still taste awesome! Next time I might put it all in a cake pan and see what happens.

    Yes, maybe too much chocolate so that the mixture was heavy and couldn’t rise! Still, they look very tempting… I’d just mash them together with some vanilla ice-cream ;)
